Rocky Road Brownies
Adapted from Maida Heatter's Book of Great Cookies. I wasn't able
to find a bag of all-white marshmallows, so I made my own, with this
recipe. One recipe of marshmallows
covered four recipes of brownies.
It's hard to find unsweetened chocolate in Israel, so I substituted
cocoa and butter for the chocolate. To replace unsweetened chocolate,
use 1 tablespoon of butter or margarine and 3 tablespoons of cocola
for each square (one ounce) of chocolate.
- Preheat oven to 350F. Grease a 9x9 inch pan.

- Sift
- ¾ cup sifted flour.
- ½ teaspoon baking powder
- ¼ teaspoon salt

- Melt, in a mixing bowl
- 1 tablespoon butter
- Remove from heat, stir in
- 3 tablespoons cocoa
- Mix in
- ½ teaspoon vanilla extract
- 1 cup sugar
- Mix in, one at a time
- 2 eggs
- Stir in the flour mixture, and then
- 2 ounces pecans, large pieces

- Bake for 23 to 25 minutes, until a toothpick comes out nearly
dry. Do not overbake.

- If you're using storebought marshmallows, while the brownies are
baking, make the following. If making your own marshmallow, arrange
for the marshmallow to be finished any time after the brownies come
out of the oven, they can go in immediately, or any time thereafter.
- 23 marshmallows, cut in half (or ¼ batch of homemade marshmallow)
- 2½ ounce pecan halves or large pieces

- Melt, in a mixing bowl
- 1 tablespoon butter
- Remove from heat, stir in
- 3 tablespoons cocoa

- If using storebought marshmallows, quickly place them on the hot
brownie, cut side down, to completely cover the cake, and return to
the oven for exactly one minute.
- If makeing your own marshmallow, as soon as it's ready, pour one
quater of the recipe over the brownie (which can be hot or cold) and
smooth it with a spatula.
- Place the pecans on top of the marshmallow.

- Now mix into the melted butter and cocoa
- 1 cup strained confectioners sugar
- ¼ teaspoon vanilla extract
- about 2 tablespoons boiling water
- Stir until smooth. If it's too think to drizzle, add a more
water, but only a bit at a time so it doesn't become too thin.
Drizzle over the brownie. Make sure to cover all of the pecans so
they stay attached.

- Let stand uncovered for at least 5 hours, slice into squares. It
may be messy when cutting. Deal with it.
